Coconut chocolates. Kokusnusspralinen.



I made these lovelies a long while back.
Even longer ago, I bought some foil printed with cocoa butter.
And I never got around to using it.
So with the expiration date close (even though I can hardly believe cocoa butter going bad), I decided to make these.


They're full of rich toasted coconut flavor.
Surprisingly so.
And they look so cute as well, don't ya think?

Coconut Chocolates

50g dried coconut flakes, toasted

80g cream, plus an additional 20g
20g light corn syrup 
150g white chocolate, chopped finely
20g butter, room temperature

500g white, milk or dark chocolate

Toast the coconut flakes at 180 degrees for around 5 minutes, or until they are golden-brown.
Boil the 80g of cream with 25g of the coconut flakes.
Cover and set aside for at least 30 minutes.
With a sieve, press out all the cream you can from the coconut flakes into another pot (they will have absorbed the liquid).
Add the other 20g of cream and the corn syrup.
Boil.
The white chocolate should be in a bowl. 
Pour the liquid over the white chocolate, make sure it's covered.
Wait one minute, then start stirring in the middle, working yourself outwards. 
When all the chocolate is dissolved, add the butter and stir until dissolved as well.
Arrange your praline sticks (or cover 4 longish sticks with aluminum foil) into a longish rectangle.
Pour the ganache into it, and rearrange the sticks, so that the ganache is about 1-1.5cm high.
Cover the surface with the rest of the toasted coconut.
Let set at room temperature overnight.

Temper your chocolate.
With a brush, first brush off all excess coconut, then brush on a thin coat of chocolate.
Wait for a few minutes to set, then cut into small and even squares or rectangles.
Dip into the chocolate with a praline fork, tap on the edge of your bowl to get rid of excess chocolate and set down gently onto baking paper or a silicon mat. 
I used printed cocoa butter paper to decorate.
You may also use coconut flakes, gold or leave them plain.

Ich hab dieses Süss schon vor längerer Zeit gemacht. 
Und noch vor längerer Zeit, habe ich eine Folie gekauft, die mit Kakaobutter bedruckt ist.
Und ich bin nie dazu gekommen sie zu benutzen.
Dann war auf einmal das Ablaufdatum nah (obwohl ich nicht glauben kann das Kakaobutter grossartig schlecht werden kann), also beschloss ich diese Pralinen zu machen.

Sie sind voll von tollem gerösteten Kokosgeschmack.
Überraschend intensiv sogar.
Und sie sehen süss aus, nicht wahr?

Kokosnusspralinen

50g getrocknete Kokosnussflocken, geröstet

80g Sahne, plus 20g Sahne, getrennt
20g Glukosesirup 
150g weisse Schokolade, fein gehackt
20g Butter bei Raumtemperatur

500g Weisse-, Milch- oder Dunkleschokolade

Röste die Kokosflocken bei 180 Grad Celsius für ca. 5 Minuten, oder bis sie eine gold-braune Farbe vorweisen.
Koche die 80g Sahne mit 25g der Kokosflocken auf.
Decke den Topf ab und lasse die Mischung mindestens 30 Minuten ziehen.
Presse, mit Hilfe eines Siebes, soviel der Sahne wie möglich in einen anderen Topf aus (mit Kraft! die Kokosflocken werden viel Flüssigkeit aufgenommen haben).
Füge die letzten 20g Sahne und die Glukose hinzu.
Koche alles auf.
Platziere mittlerweile die gehackte weisse Schokolade in eine Schüssel.
Giesse die Flüssigkeit über die Schokolade, stelle sicher das diese bedeckt ist.
Warte eine Minute, dann fang an von der Mitte aus zu rühren, arbeite dich bis an den Rand vor.
Wenn die gesamte Schokolade aufgelöst ist, füge die Butter hinzu und rühre bis diese auch aufgelöst ist und die Masse homogen ist.
Arrangiere deine Pralinenstangen (oder 4 dünne, lange Stäbe in Alu-folie eingewickelt) in ein längliches Rechteck.
Giesse die Ganache dort hinein und arrangiere die Stangen so, dass die Masse zu einer Höhe von 1-1.5 cm reicht.
Verteile die restlichen gerösteten Kokosflocken darauf.
Lass die Ganache bei Raumtemperatur (nicht über 20 Grad) Übernacht anziehen.

Temperier deine Schokolade.
Entferne zunächst die überschüssigen Kokosflocken mit einem Pinsel, dann pinsele die Oberfläche mit einer dünnen Schicht Schokolade.
Warte ein paar Minuten bis diese angezogen ist, dann schneide die Ganache in kleine und gleichmässige Quadrate.
Überziehe diese mit Hilfe einer Pralinengabel, klopfe die überschüssige Schokolade am Rand deiner Schokoladenschüssel ab und platziere die Praline sanft und sauber auf Backpapier oder einer Silikonmatte.
Ich habe mit Kakaobutter bedruckter Folie als Garnierung genommen.
Du kannst jedoch auch Kokosflocken oder Blattgold benuten, oder sie "au nature" belassen.
