rose bakery @paris and rose's pistachio cake. pistazien kasten kuchen.





rose bakery.

to be honest, it was not love at first sight.
i had trouble finding the location, then it was very narrow and full, and the cement floors looked shabby.
second impression:
amazing products, a vintage shabby chic feeling and beautiful pottery.

it is a quaint café located in two places in paris, among other cities.
it's philosophy is to use only the best of products, organic if possible and seasonal.

rose, the author of their cookbook "breakfast lunch tea" and co-founder of the rose bakery, 
says that "life is improved by great food"
yes, it is.

um ehrlich zu sein war es nicht liebe auf den ersten blick.
ich hatte problem den ort zu finden, dann war es drinnen schmal und voll,
und die zement boden sah schäbbig aus.
zweiter eindruck:
erstaunliche produkte, ein vintage shabby chic gefühl und wunderschöne töpferwaren.

es ist ein süsses café, welches zwei mal in paris zu finden ist, und in weiteren grossstädten.
rose's philosophie ist es nur die besten produkte zu verwenden, wenn möglich organisch und saisonal.

 rose, die autorin von deren kochbuch "breakfast lunch tea" und mit-gründer von der rose bakery,
sagt dass "das leben wird durch wunderbares essen verbessert".
ja, wird es.

this cake, introduced to me back in october at the rose bakery in paris, 
intrigued me.
a green inside, a mild pistachio taste, a tangy topping.
a wonderful tin cake.

mine turned out slightly darker than the original on the outside, 
next time i will control the temperature in my oven better.
other than that it tastes very, very close to the original.
it even has, in my opinion, a denser moist inside.

and the almond, pistachio combination,
nutty, marzipan aroma in the background, 
a joy to eat.



pistachio cake

adapted from "breakfast lunch tea - rose bakery" by rose carrarini

250g unsalted butter
225g granulated sugar
grated zest of one lemon
1/2 tsp vanilla extract
plus seeds of 1/2 vanilla bean
200g eggs (four eggs)
100g ground almonds
110g ground pistachios
55g all-purpose flour
1 tsp baking powder
1/4 tsp salt

topping:

50g pistachios
50g granulated sugar
grated zest and juice of one lemon


butter 25-30cm cake tin.
preheat the oven to 180 degrees celcius.
cream butter and sugar until fluffy. 
add the vanilla and lemon zest.
add eggs, one at a time, beating well after each addition.
with a spatula, fold in the nuts, flour, baking powder and salt.
spread evenly in your cake tin.
 bake for 40-50 minutes, or until an inserted toothpick or knife comes out clean.
remove from the oven and wait for it to cool slightly before taking it out.
let cool completely before making the topping.
for the topping, bring the sugar and lemon mixture to a boil with the pistachios. 
boil until the mixture has reduced a bit and has thickened slightly.
spread onto the cake.

dieser kuchen, welcher mir diesen oktober in der rose bakery in paris bekannt gemacht wurde, 
faszinierte mich.

eine grünes innere, ein milder pistazien geschmack, ein spritziger überzug, 
ein wundervoller kastenkuchen.

meiner ist aussen etwas dunkler als das original geworden, 
nächstes mal werde ich die temperatur in meinem ofen besser kontrollieren.
abgesehen davon kommt es sehr, sehr nah an das original dran.
es hat sogar, meiner meinung nach, ein dichteres feuchtes innere.

und die mandel, pistazien kombination,
nussig, marzipan aroma im hintergrund, 
ein freude zu essen.


pistazien kuchen

adaptiert von "breakfast lunch tea - rose bakery" von rose carrarini

250g ungesalzene butter
225g zucker
geriebene zeste von einer zitrone
1/2 teelöffel vanille extrakt
plus den samen von 1/2 stange vanille
200g eier (vier eier)
100g gemahlene mandeln
110g gemahlene pistazien
55g weissmehl
1 teelöffel backpulver
1/4 teelöffel salz

überzug:

50g pistazien
50g zucker
geriebene zeste und saft einer zitrone


fette eine 25-30cm kastenform.
heize den ofen auf 180 grad celcius vor.
schlage die butter und den zucker auf bis dieser schaumig ist.
füge vanille und zitronen zeste hinzu.
füge die eier, eins nach dem anderen, hinzu, und lasse jedes gut unterlaufen.
hebe mit einem spatel die nüsse, backpulver und salz unter.
verteile die masse gleichmässig in deiner kuchenform.
backe für 40-50 minuten, oder bis ein zahnstocher oder messer ohne rückstände aus dem kuchen kommt.
hole den kuchen aus dem ofen und warte kurz bis er rausgelöst wird.
lass den kuchen komplett auskühlen bis der überzug vorbereitet wird.


für den überzug: 
bringe die zucker und zitronenmischung zum kochen mit den pistazien zusammen.
koche die mischung bis sie etwas reduziert ist und dicker geworden ist.
streiche den überzug auf den kuchen.
